Mill Bayou Bake Shop - Thoughtfully Handcrafted

Our uncommon sourdoughs, like traditional sourdoughs, are shaped by their surroundings. They rise in a home kitchen overlooking Mill Bayou, influenced by the air, the water, and the rhythm of coastal Florida.

Chef Luke Belsito, a Culinary Institute of America alumnus, spent much of his career in professional kitchens without windows. Today, his sourdough rises with a view. Fittingly, “Belsito” translates to beautiful view — a name that feels especially at home in this season of his work.
We work with thoughtfully sourced ingredients, natural fermentation, and time-honored technique to create preservative-free breads and baked goods for the Tampa Bay community.
